I don't understand the acuspark system as all other electronic ignition systems work on 12 v rather than the 9v of ballasted points systems.

Hmmm, me neither. I asked and got told by Accuspark to remove the ballast but they were very vague on the details. I connected it up as I thought should be (12 months ago) and it has always started fine since, apart from very damp cold mornings, when it needs some Easy Start spray. Maybe if I understood how to wire it correctly, I wouldn't need the Easy Start in the winter? Once it's running, it's fine all day.

I'm ok with electrickery if I've got a diagram & am left alone to concentrate on what I'm doing.

Lol that sounds like my day at work as a control system designer and programmer! It's never quite as it says in the manual! - a bit of peaceful time, trial and error and usually - success haha?

Can i jump on this too..... My starter on the Essex v6 looks exactly the same and has the 3 connections.... every so often it just clicks then starts after a few attempts or a whack..... mine also has had an electronic ignition installed so am i right in saying to test this out just disconnect the 3rd black wire and leave the Black/Yellow Trigger wire on and the Big Red on only and all should work?

Yes I think so, the black wire gives the coil 12v when cranking ( points run on 9v) a ford  electronic ignition doesn't have this wire but not sure with an aftermarket system.

Yours should crank but may not fire.

just crossed my mind,perhaps I would need a starter without the ballast terminal

Mine has an accuspark ignition and when installing with the original Lucas starter motor, I couldn't work out how to bypass the ballast resistor so I just left it all as was and it runs fine apart from in this weather, it needs a bit of Easy Start first thing in the morning...

Going from memory,I tee'd off a new cable and ran it adjacent with the OE ballast wire near the bulkhead. I'll have to recheck the starter end

Normally you remove the ballast wire & replace it with a normal piece.
